One of the TV chef's that we all know and love has been known to shout "Pork Fat Rules!" In that spirit I have always loved Bacon and find it hard to only eat it for breakfast or on the occasional sandwich. Today I will share with you three Bacon appetizers that are simple to make and delightful in flavor. I do not claim them to be low calorie or low fat, only full of robust flavor. Tailgate season is now and the Holiday parties will begin soon. I suggest you try these on the family first so You don't have to wait to eat them. I do suggest Deli Bacon for two reasons generally it is thicker and also it is drier both these attributes make these appetizers easier to assemble.

Bacon wrapped Water Chestnuts

Ingredients:

1 can whole water chestnuts

8-10 slices bacon (Deli)

soy sauce ( Dark is my favorite)

Toothpicks (wood)

Directions:

Wrap bacon around water chestnut secure with toothpick. You should get three to a strip of bacon. Place in casserole and drench in soy sauce. Bake, broil, or microwave till bacon is almost crisp. Serve hot!

Bacon wrapped Stuffed Jalapeno Peppers

Ingredients:

Jalapeno peppers (fresh) top and seeds removed

cream cheese

Bacon (Deli)

Toothpicks (wood)

Directions:

Carefully remove top and seeds from jalapeno pepper, Stuff cavity with cream cheese. Wrap with bacon ans secure with toothpick. One piece of bacon per stuffed Jalapeno pepper. Place on cookie sheet, bake, broil, or microwave till bacon is almost crisp. Serve hot!

Bacon wrapped Figs

Ingredients:

dried whole figs (California is best)

Bacon (Deli)

Honey (Your favorite)

Toothpicks (wood)

Directions:

Wrap each fig with bacon and secure with toothpick. Again you should get three per slice of Bacon.Stand on end in casserole and place a drop of honey in cavity created by wrapped bacon. Bake, Broil, or microwave till bacon is almost crisp. Serve hot.

Scallops wrapped in Bacon

Ingredients

Fresh Sea Scallops (Thawed if frozen)

Bacon (deli)

Garlic butter

toothpicks

Directions:

Wrap each scallop with bacon and secure with toothpick. Place in casserole and baste with garlic butter. Bake, Broil or microwave till bacon almost crisp... serve hot!

Bacon! Bacon bacon bacon -- I know it's here somewhere! Oh, one of my favorite foods! Three awesome recipes plus one (the scallops) that would probably kill me dead (serious allergy) -- and while I love food, I'm not convinced it's worth dying for. But if ever I'm having a meal I know will be my last, the bacon wrapped scallops will be on that menu! LOL! And the bacon-wrapped figs -- what an amazing idea! I never would have thought of that. I am so hungry now....

I've never met a bacon dish I didn't like. "Perhaps serve any of these with a side dish of Fudge."...now that's funny!
