HOMEMADE CHICKEN NOODLE SOUP

BROTH:

1 family sized pack chicken w/ skin (for flavor)

1 celery stalk-chopped

1 lg onion-chopped

2 cloves fresh garlic-pressed

1 carrot-grated

add plenty of salt to cut the smell of the boiling chicken

7 chicken bouillon cubes or 2 tbs of chicken base

In a large soup pan add rinsed chicken and fill to about 3 inches from the top, with water (about 8 cups). Boil until the chicken is done or comes easily from the bone. About 20 min. Remove chicken and set aside. Put broth on simmer, add bouillon cubes or base and the other ingredients.

NOODLES:

2 cups all purpose flour

2 tbs Crisco grease (shortening)

2 eggs

salt to taste

water

In medium bowl add flour and salt mix and test taste for desired amount. Then add Crisco. Use a pastry knife or butter knife to 'chop' the shortening up until it holds a form. Mix in eggs. Then (I don't know the exact amount) add a little water at a time. Make a dough that is spreadable. Not too much water is needed. Approx 2 tbs or more. Mix well and place on a floured counter and roll. Cut into strips, about an inch wide and 3 inches long. Put into simmering broth.

When finished with the noodles, peel chicken clean and pull into pieces and add to broth and noodles. Allow the noodles to cook approx. 20 min.

Homemade Biscuits are good with this.

Pot Roast

2 to 3 lbs. beef roast seasoned and seared in frying pan with a small amount of oil, on HIGH for 10 sec on both sides

1 bay leaf

2 cloves garlic pressed

Tony's seasoning recommended but you can choose others such as seasoned salt

5 lg potatoes, peeled and quartered

1 bag baby carrots OR 1 bag carrots peeled and quartered

1 lg onion, quartered

1 1/2 tbs Worcestershire Sauce

Put carrots and potatoes in a crock pot. Place seared roast on top. Add a little more seasoning. Add water about 3 inches above the roast, add bay leaf, Worcestershire. sauce, onion and garlic. Cook on high 3-4 hours depending on size of roast. The roast will come apart and the veggies will be soft when done.

Lasagna

Sauce:

2 lbs- hamburger meat (ground chuck preferred)

1 lg- onion-chopped

Garlic powder

Italian seasoning

2 lg- cans tomato sauce

1 can- mushrooms -chopped
