I find myself often staring at a blank page when it comes to writing my grocery list. I am a very loosely affiliated vegetarian and sometimes I really have no clue what to eat. There are tons of recipes on-line for vegan and vegetarians but I find myself having a hard time spelling a lot of the ingredients let alone finding them at my corner grocery. Add to that I'm a College Dropout so it's not like I can afford some of these fancy ready made veggie dishes that cost 6-10 dollars a pop. So if you're like me and you are wondering, "What the hell am I going to eat tonight?" Here's a quick and easy list of some of my favorite veggie options.

Edamame and Cheese

Edamame, (pronounced ay-duh-MAH-may) is one of my favorite quick fix meals. Go pick up some Edamame (that's Japanese for Soy Beans) in your local freezer section. (Usually near the frozen peas.) For this particular dish I would suggest getting pre-shelled Edamame as you will be kicking yourself if you have to de-shell them yourself. Also pick up a small bag of pre-grated Cheddar Cheese.

Ingredients

1 cup shelled edamame

1 scoop grated cheddar cheese

Preparation

Take about a half a cup of the Edamame and put them in a bowl and cover them with water. Throw it in the microwave for 2 minutes on high. Drain the water from the soybeans and cover with the cheddar cheese. Let the cheese melt, and eat. This is a really easy protein rich snack.

Chicken Club Sandwich (Faux)

When I go searching for fake chicken I prefer to eat Morningstar's Original Chik'nPatties. You can find these in the frozen section of your grocery (usually near the frozen pizza and organic foods.) Boca also makes a pretty decent faux chicken patty but I've always been a fan of Morningstar's products (Maybe that's because they are cheaper!)

Ingredients

1 Morningstar Chik'n patty

2 toasted slices bread

1 tomato sliced

Mayo

Katsup

Preparation

Cook the patty as the directions suggest while you toast two slices of bread. Slather them with mayo and katsup, slice up a tomato from your garden and add the cooked patty. Viola! You have yourself a pretty tasty faux chicken sandwich that even your meat eating friends will devour.
