Holiday or Everyday Corn Muffins

This recipe, for quick simplicity uses a box corn muffin mix.

1 Pkg Corn Muffin Mix
1/2 tsp Ground Rosemary
1/2 C Corn, drained(optional)
1 Egg
1/3 C Skim Milk
1 Tbs Honey

Directions: Preheat oven to 400 Deg. Combine corn muffin mix, corn and rosemary in a bowl. Mix dry ingredients then form a well in the middle of the bowl. Combine honey, milk, and slightly beaten egg and pour into well. With a fork gently fold ingredients until all liquid is combined
 with the dry ingredients. Do NOT continue to mix until the lumps are gone. The batter should be a little lumpy. Lubricate six cups of the muffin pan with a light spray oil. Fill cups half full with batter. Bake for 18 - 20 minutes or until muffins are golden brown.

Serve warm with light margarine and honey.
