How to Cook a Perfect Roast Beef

Christmas Dinner - what are you going to make this year? Some people make turkey, some make ham - and some make roast beef. There are many ways to make roast beef, depending on the cut you use. Some like to use the crock pot, some use the oven. This recipe uses the oven, which means that
 all other baking must be done the day before.

On Christmas Eve Day, prepare any desserts that need to be baked, such as apple, blueberry and pumpkin pies and Christmas cookies.

Ingredients:

Rump roast, round roast or sirloin tip roast large enough for each person to have about a pound of meat

Garlic powder

Onion powder

Black pepper

Salt

2 garlic cloves, peeled and sliced

Preheat the oven to 375 degrees Fahrenheit.

Cut small slits in the roast beef. Space them a couple of inches apart. Put a slice of garlic in each slit. Sprinkle the garlic powder, onion powder, black pepper and salt over the top of the roast beef. Use less garlic powder if you used a lot of sliced garlic inside the roast beef.

Bake for one-half hour. Turn the heat down to 225 degrees Fahrenheit and continue baking until the internal temperature gets to 135 degrees Fahrenheit. Remove roast from oven. Remove drippings and add to a saucepan, then tent the beef with foil and allow to sit for 15 mintues.

Gravy

Add about ½ cup water or red wine to the roast beef drippings. Add 1 teaspoon pepper and ½ teaspoon salt. Mix about 1 tablespoon cornstarch with 1 tablespoon water, then add to the beef dripping mixture in the pan. Stir constantly until thickened.

Transfer the roast beef to a serving platter. Serve with mashed or baked potatoes, cream corn, candied yams and green beans.
