Make Homemade Fudge for Valentines Day

If you are still wondering what to get your valentine this Valentines Day you may want to make some home made fudge for them. You can give home made to just about any one. It is easy to make but it does take some time
 and it can be a nice surprise for your valentine.

This is a basic fudge recipe that is easy to make and can be stored till you are ready to give it to your valentine.

For this fudge recipe you will need:

2 cups of sugar
¾ cup of milk
2 squares or 2 ounces of unsweetened chocolate
1 tablespoon light corn syrup
a dash of salt
Some butter
1 teaspoon Vanilla
Chopped candied fruit or chopped nuts are optional

Lightly butter a 8x8x2 inch pan. Then in a 2 quart saucepan stir together the sugar, milk, chocolate, corn syrup and salt. Cook and stir over medium heat till the sugar is dissolved and the mixture begins to boil. When the mixture boils (it will take awhile) then put a thermometer on the side of the saucepan.

Continue to cook this mixture stirring only when necessary to prevent sticking. Cook to the soft ball stage (put a drop of the mix in a cold glass of water and see if it forms a flat ball) or to 234 degrees. Remove the saucepan from the heat and add 2 tablespoons butter but do not stir. Let the mix cool without stirring or moving the pan till the bottom of the pan feel comfortable to touch. When the pan is comfortable to the touch remove the thermometer and beat the mix by hand with a wooden spoon till the mix becomes thick or till it stays thick when dropped onto waxed paper. If you want some fruit or nuts in the mix now is the time to put some in. Then pour the mixture into the 8x8x2 inch pan. Let it cool and then cut it into squares.

You can put the fudge into plastic containers or plastic bags. If you want to make the fudge pretty you can put it in a box or bag that you have decorated with hearts or what ever you desire. This is also a good recipe to share with the people you work with. Or you can have it at a party. This fudge stays good for a while but it is best to eat it soon after you make it.
