This is a really cute cake for your St. Patrick's Day party. It's a fun way to liven up your dessert for the occasion. Here's how to make the Pot of Gold cake...Supplies:
========
Boxed cake mix
Oil, eggs, and water as noted on the cake package
Circle cake pan (8 or 9 inch)
Cupcake pans
Paper cupcake cups
A knife
White frosting
Food dye
Cookie sheet
Optional: sprinkles (gold or sparkles)
Step 1 ~
Bake the cake into one 8 or 9 inch circle pan, and as many cups as you have batter for, using the directions on your cake mix's box. (You'll probably have 10 or 12 cupcakes.) Turn them out onto a wire rack or inverted plate to cool before going on.
Step 2 ~
Using the knife, cut a slice off of the top of the circle, to make a flat top-edge of your pot. You can use the sliced off bit to form little feet for your pot if you'd like. You may have a little bit of cake left over after this cutting. (Don't waste that! Eat it.)
Step 3 ~
Arrange the pieces on your cookie sheet. Turn your cookie sheet so that the longest edge goes side to side. Place the pot, with that cut flat-edge towards to top, about an inch from the bottom of the cookie sheet, slightly to the left of the center. If you made feet for your pot, put them in place under it. (If they don't seem stable enough, use a bit of frosting as 'glue' to hold them in place.)
Step 4 ~
Mix a about two-thirds of your frosting with food dye to turn it black. (Check the food dye package for mixing instructions for each color.) Frost the top and sides of the pot with the black frosting. Mix the remaining white frosting with food dye to turn it gold, and use it to frost all the cupcakes. If you're using sprinkles, you can put them on your cupcakes to make them sparkle.
Step 5 ~
Arrange the cupcakes across the top of your pot, with a few spilling down the right-hand side, so that the cupcakes look like gold coins filling and over-flowing the pot.
