Campbell's is not just for soup lovers any more. Campbell's soup has always been a staple in my pantry. Naturally I was excited to discover that they have come out with a line of easy to prepare boxed dinners. I don't
 often spend the extra money on packaged meals, but because the price was so reasonable, I decided to give it a try.

Campbell's Supper Bakes comes with everything you need to make a delicious meal. You simply add chicken. The directions boast an easy five-minute prep and thirty-minute baking time. This sounded ideal for a busy mother of three small children. One twenty ounce package makes six servings and alternate instructions were even included for skillet and microwave preparation. The flavor I selected was lemon chicken with herb rice.

I began my new adventure by thawing six uncooked boneless, skinless chicken breast halves. After preheating my oven to 375 degrees F, I mixed the seasoning packet, hot water, and rice in a 13 by 9 inch baking dish. At this point my children came into the kitchen to see what was causing the delicious aroma. The instructions called for two tablespoons of butter or margarine, cut up. I omitted this ingredient and had no bad results. This is good news for those who are looking to trim the fat from their diet.

Secondly , I placed the uncooked chicken on top of the rice, poured the baking sauce over the chicken, and added the crumb topping as a final touch.

The last step was placing the uncovered baking dish in the preheated oven for thirty minutes, or until the chicken is cooked through. You simply need to give the rice a quick stir before serving.

The moment of truth had arrived. Would my three little picky eaters actually consume this fine meal I had prepared? I was pleased to watch them eat every last bite. The rice had a perfect consistency and the chicken was tender and juicy. They actually asked me when I was planning to make it again before they left the table. Only on rare occasions do all three children agree on anything, but in this case their approval was unanimous.
