Easy Dishes for Popular Fish

Flounder are a popular fish for anglers due to their reputation on the table. Flounder are a white, mild fish that fits into many quick and easy recipes. People who say they don't like dishes with a "fishy" taste often prefer flounder to other fish.

In the northern part of their range on the Atlantic Coast, flounder are often known as fluke. Summer flounder range down to the Carolinas, while southern flounder can be found in inshore waters from the Carolinas through the Gulf Coast. Winter flounder are a smaller species that occurs in the northern and mid-Atlantic states.

Flounder lie on the bottom of the ocean floor and are often caught by drifting or casting live bait. As a food fish flounder are delicate and shouldn't be overcooked. Some folks prefer them to any other fish.

Flounder Amandine

6 flounder fillets
½ cup melted butter
½ cup lemon juice
3 teaspoons paprika
dash salt and pepper
½ almonds, slivered

Preheat oven to 350 degrees. Arrange flounder on a greased baking dish. Combine butter, lemon juice, paprika and salt and pepper, mix and pour over fish. Sprinkle almonds over the top. Bake for 20 minutes until fish is done, then place in the broiler for 3 minutes to brown. Serves 3.

Charleston Flounder in White Wine

1 lb flounder fillets
1/3 cup minced onion
½ cup fresh mushrooms, chopped
½ teaspoon curry powder
½ teaspoon paprika
½ teaspoon black pepper
½ cup white wine
dash salt

Preheat oven to 350 degrees. Arrange fillets in a greased baking dish. Mix wine, onion, mushrooms, and seasonings together and pour over fish. Bake for 25 minutes or until fish is done. Serves 2. Very good served with wild rice.

Baked Southern Flounder with Veggies

This is a particularly delicious way to cook large "doormat" flounder, as it picks up the flavor of the veggies and the broth prevents the fish from drying out. You need a large baking pan for this one, as the fish needs to be covered.
