It happens at times after you slaved away making that huge batch of Easter bread for the family that it just flops. This year mine decided not to rise. I am really clueless on the mater because I know I did not kill the yeast. So in order here are the steps I tried to save my poor batch of Easter bread.

First: I decided to try redoing the yeast, So I got another cake and dissolved it in warm milk, mixed it back up with my dough and added some flour to even out the icky wet sticky mess. Placed back in the preheated oven (now turned off) with a towel overtop and I checked it each hour. By the fifth hour, Keep in mind this was at 2am I had dozed off on the couch, it had risen maybe a ¼ after all that time I knew it was just not going to rise. So I figured what the hey and baked it anyways.

The outcome, 4 heavy loaves. Now what? So I figured my family is about to become little test piggies. I sliced it up very thin about ¼ of an inch and let them sit out to harden. The end results turned out to be little cookie like type slices that tasted very closely to biscotti. They are wonderful with tea, and if you want them moist, nothing a little butter and the microwave won't help.

My loaves where finished Friday morning around 4am by this time I am exhausted and so upset that the Easter bread was a disaster but the outcome of the whole thing and my new invention worked wonders and everyone loved them. Out of the four loaves the only thing that remains is one loaf. Everyone in the family has taken to this little slice like cookies and been nibbling on them on and off since Friday.

I think I will try and play with this recipe and change the anise to almond, orange or even vanilla. Leave the yeast out and cut them up after I bake them to dry out. And package them in the cookie pot for a sweet treat. That will no longer be just an Easter Holiday baking fest.
