Most hosts and hostesses would prefer to have leftover food than not enough, so instead of trying to guess how much to buy, don't worry about ending up with leftover fare. Purchase meat that's more than adequate for the occasion, and you can use the leftover portions to create other tasty dishes.

Tasty Ham Loaf

1-½ pounds leftover ham, ground

2 large eggs, beaten

¼ cup onions, finely diced

½ cup dried breadcrumbs

¼ cup sweet bell pepper, finely diced

½ cup milk

½ teaspoon mustard powder

¼ teaspoon black pepper

Preheat oven to 350 degrees Fahrenheit. Combine all ingredients, and pat into a standard size loaf pan. Bake for approximately 1-½ hours or until done in the center. Allow the pan to sit for about five minutes before removing the ham loaf and slicing.

Saucy Ham on Toast

1 can cream of mushroom soup, prepared according to label directions

3 or 4 cups of leftover ham, diced

¼ cup onion, finely diced

¼ teaspoon black pepper

Toasted bread

Heat cream of mushroom soup, and stir in leftover ham, onions, and black pepper. Heat thoroughly, and serve on toasted bread.

Creamy Ham & Potato Casserole

3 cups milk

6 tablespoons butter or margarine

6 tablespoons all-purpose flour

1 pound leftover ham, diced

4 ounces shredded cheddar cheese

4 cups cooked red potatoes, cubed

12 pearl onions, cooked

½ cup breadcrumbs

1 tablespoon butter or margarine, melted
