ade pasta recipes, that are my families favorites. If I do have any leftovers, I always freeze single servings so they can heat one in the microwave for future lunches. The lasagna is great for the holiday gatherings and is always a crowd pleaser!
LEANARDA'S LASAGNA
INGREDIENTS
. 1 lb hamburger cooked and drained
. 1 container of 16 oz ricotta cheese
. 1 16 oz shredded mozzarella cheese
. 1 egg beaten
. 1 26 oz jar of prepared spaghetti sauce
. 1 cup of grated Parmesan Cheese
. 1 and 1/2 package of lasagna noodles
PREPARATION
Cook the lasagna noodles according to directions on the package. Preheat oven to 350 degrees. Mix ricotta cheese, 1/2 of the mozzarella cheese, 1/2 of the parmesan cheese and egg together. Add the cooked hamburger to spaghetti sauce. Spoon 3/4 cup of the sauce mixture into a 13x9 inch oblong baking pan. Top the sauce with a layer of the cooked lasagna noodles, then a layer of the cheese mixture, repeat layers once more, than cover with remaining lasagna noodles and top with remaining sauce mixture . Sprinkle with 1/2 cup parmesan cheese and 1/2 package of the shredded mozzarella cheese. Cover with aluminum foil , bake for 45 minutes. Remove from the oven, remove aluminum foil, let stand for 15 minutes. Cut, serve, enjoy!
STUFFED MANICOTTI SHELLS
INGREDIENTS
.2 pkg 10 oz chopped frozen spinach
.2 cups ricotta cheese
.1 cup shredded mozzarella cheese
.1/3 cup parmesean cheese
.2 eggs beaten
.1 pkg. manicotti shells
.1 26 oz jar of prepared spaghetti sauce
PREPARATION
Cook the frozen spinach and drain. Cook Manicotti Shells according to directions on the package, drain. Mix the cheeses, spinach and eggs together. Stuff the shells evenly with the cheese mixture, pour 1/2 of the sauce into a 13x9 inch baking oblong baking pan. Then place the stuffed shells in the sauce stuffed side up. Cover with aluminum foil, bake for 40 minutes in a preheated 350 degree oven. Remove from the oven when done. Remove the aluminum foil, heat remaining sauce, serve over the shells.
