A Deliciously Healthy Alternative to Fast Food Sandwiches

Okay, I admit that I will buy a sausage McMuffin with egg sandwich when traveling early in the morning. It's convenient and tasty enough, but then I have to adjust what I eat for the rest of the day due to the high calorie and fat content. However, I make my own delicious breakfast sandwich when I'm
home.

My substitute has received rave reviews from a number of people, so I know it competes favorably with the fast food version. Like most people, I'm trying to limit my fat, cholesterol and calorie intake. This doesn't take long to prepare and you will have a very hearty, high protein meal to start the day off right.

Recipe for McBob's Breakfast Sandwich

Ingredients:

1 Eggbeaters egg container (small)
1 Morningstar Farms Griller Vegan Burger
1 Thomas English Muffin (plain), toaster
1 slice of Kraft 2% milk reduced fat cheese
Pam Organic Olive Oil Spray (or Butter version)

Preparation:

- put English Muffin in toaster and set darkness to your preference
- lightly spray a cereal bowl with Pam Organic Olive Oil
- pour Eggbeaters container into the bowl (you can use half if you don't want a large egg sandwich)
- while the English Muffin is toasting, put the bowl with egg into a microwave and set on high for two minutes; you can drape a paper towel over it to prevent spattering
- when the English Muffin is done, slide the cooked Eggbeater egg onto a slice
- place a slice of Kraft reduced fat cheese on top of the egg
- place the Morningstar Farms Griller burger on a paper towel and microwave on high for one minute
- when the Griller is done, place it on the egg sandwich (by now, the cheese will have melted and will continue to melt)
- add catsup or your usual condiment to the sandwich
- enjoy your delicious homemade breakfast sandwich!
