The Armadillo in Greeley Offers Great Food, Good Service
If you haven't heard of The Armadillo, shame on you. It's a great Mexican restaurant with several locations in Colorado. Once you've eaten here, no other Mexican restaurant compares.

The first time I visited this restaurant, it was packed and my family waited an hour or so for a table. (A major drawback is The Armadillo doesn't accept reservations for parties under eight.) However, it was a Friday night, Cinco de Mayo, and the day before the local college's graduation. These three occasions on the same day made for a very full house. On my most recent trip to the restaurant, we hit a lull in traffic and did not wait for a table at all.
On to the best part... the food! The meat is properly cooked (always a big plus for me). Everything comes loaded with cheese, which is a double edged sword for some of us (think lactose intolerance). Also, the food has the right amount of kick - spicy enough to be good, not so spicy you breathe flames. Traditional items like enchiladas, burritos, quesadillas and margaritas can be found on the menu. Portions are a little big, as restaurant portions usually are, but not too extreme. Prices are decent, as well. A single person could eat at The Armadillo for under $15. I had relatives from out of town eat here, and they are now jealous that there aren't any Armadillos where they come from.
The service at The Armadillo is usually pretty good, too. They've got good servers, who are good about getting you your chips, salsa and drinks quickly. The entrees usually arrive without too much delay either. Occasionally I've experienced a lag around dessert, but that has been due to an influx in customers. Definitely not the servers fault if the kitchen gets swamped with orders.
One of the most interesting things at The Armadillo in Greeley is that it is in an area of downtown with many historic buildings. It's a neat looking area of town, that has the typical relaxed feeling small downtown areas usually have. The buildings have a lot of character, and the town is still small enough you can park downtown for free.
