Paralegal work may be something that would interest you if you like paperwork or investigative thinking. This job is essentially the background work done under an attorney to assist him or her in their building of cases. Case law, the process of discovery, deposition summaries, plea documentation and many other duties comprise the work of a paralegal. These people can make good money but their salaries, naturally, depend on the part of the country where they find work. A good paralegal is worth his weight in gold to a busy attorney, so salaries can probably be negotiated up when the paralegal has some experience and a good work history. Memphis has three good paralegal schools where their students can prepare for certification in the state.

The University of Phoenix Memphis Campus is the first school I looked at because their schedules all around the country are modeled for working adults who want to get their education in the evenings or weekends, outside of their present work times. The Phoenix Schools have been around for quite some time, so they are the crème of the crop in this category. Their fees are very competitive with the local Universities and Technical Schools too. The Memphis Campus classes are held just once a week in very small supportive work groups that help each other as they proceed through the material.
