How to Make Four Bean Veggie Chili

I don't know about you but when the mornings and evenings are chilly and the afternoon is warm I think "It's Chili Time!" I know there are days when you have cleaned out the garden and need to use some of the bounty before it spoils. This is a Vegetarian Chili we like. It is easy to add some meat if you must. Brown 1-2 pounds of meat and add it with the beans. Make it for your next Tailgate Party.

Four Bean and Vegetable Chili

Ingredients:

2 Tablespoons olive oil

1 softball sized onion fine diced

2 large carrots grated

1 large parsnip grated

2-3 bell peppers diced (red, green, yellow, use what you have)

6-8oz pkg Portabella mushrooms chopped

3-4 cups diced tomatoes

16oz jar salad olives (drained & pureed)

1 Tablespoon Garlic Powder

1 Tablespoon chili powder

1 Tablespoon dried oregano

½ teaspoon salt

½+ teaspoon black pepper

16oz can black beans drained and rinsed

16oz can red beans drained and rinsed

16oz can white beans drained and rinsed

16oz can baby lima beans drained and rinsed

1+ cup Chateau de Spigot (aka water)

Directions:

In a large heavy bottom pan place oil, onions, carrot,parsnip, peppers,and mushrooms. Over Med-Hi heat stir till tender crisp 4-5 min. add tomatoes, purred olives, garlic powder, oregano, chili powder, salt, and pepper. Stir 4-5 min. Add beans and Chateau de Spigot, stir well reduce heat to Low and allow to simmer uincovered 20-30min.

Notes:

Add or Delete any veggies that you don't have on hand. Use whatever veggies you have on hand. The second day you could add some cooked pasta ad grated cheese for a great chili-mac. The best enhancement to Chili is Corn Bread... Here is my simple recipe

EZ Corn Bread

Ingredients:

1 Cup corn meal (your favorite)

1 cup all purpose flour

1 Tablespoon baking powder

½ cup honey (Your favorite)

1 cup buttermilk

2 large chicken eggs beaten

½ cup olive oil

Directions

preheat oven to 425. dump all ingredients into a deep bowl, mix well pour into a 9x9 glass dish. Bake in preheated oven25-30min cut in 9 pieces serve with your favorite spread or crumble into the chili
