How to Make a Pumkin Crisp
Tis pumpkin season again. My Cuz "The Snow Queen" has shared her talent with a "new" pumpkin crisp recipe. It is delightful for dessert even if it's not a holiday meal. Beware: This si not a low calorie or low fat dessert. Put a fresh pot of Columbian Coffee on the stove. "The Snow Queen loves that flavored creamer. We'll roll up our sleeves, take off our rings, wash our hands, and get baking a special dessert for our selves and someone we love.
Snow Queen's Pumpkin Crisp
Ingredients:
16oz can pure pumpkin
12oz can evaporated milk
3 large chicken eggs (Brown or white)
1 ½ cup brown sugar (light or dark)
2 teaspoon pumpkin pie spice
1 pkg yellow cake mix (your favorite)
1 ½ cups chopped pecans (Sub your favorite nuts)
1 Cup melted butter (Sub margarine)
8oz cream cheese, room temp(Your favorite)
1+ cup powdered sugar
1 cup cool whip topping
Directions:
Preheat oven to 350. Grease a 9x13 baking dish and set aside. Mix pumpkin, milk eggs, and sugar and pour into greased 9x13 pan. Sprinkle cake mix over top of pumpkin mixture, sprinkle pecans over top of cake sprinkles, drizzle melted butter over all... DO NOT STIR! Bake @ 350 for 1 hour. Allow to cool and flip onto platter. Mix room temp cream cheese, powdered sugar and whipped topping. After crisp is completely cooled frost with this delightful topping. Cut into 12...I don't think I could eat 24

Beware this is a habit forming dessert. You will be tempted to make in the middle of summer. It is a perfect enhancement to a tailgate party or a Thanksgiving table. This does enhance Turkey or Ham dinners equally. I would avoid serving it to children.... They will only want more. Why share if you don't have to?
Wanna kick it up a notch? Replace the yellow cake mix with chocolate cake mix and add a cup of chocolate chips to the nuts. Remember a recipe is only you Rand McNalley road map. You determine what direction you are going to travel.
