For some, the worst parts of the holiday season are Thanksgiving and Christmas. Along with images of family, the first thing that many people think of when taking a trip down memory lane, is the foods they enjoy during those holidays. Unfortunately, being on a diet during the holidays is note really fun, and more importantly it most likely will make you angry that you are missing out on some of your favorite foods. I know for me my diets have always failed around that time. One of the main culprits for causing my diet to fail during Thanksgiving is chocolate bread pudding made by my mother. So last holiday, I decided to see if I could come up with a low carb alternative. I figured that instead of using regular ingredients, I could attempt to recreate it using low carbohydrate and sugar free ingredients. This recipe is great on taste and is also great on your diet. You will swear it tastes just as good as the real thing.

You will need the following ingredients:

1 teaspoon unsalted butter

4 large eggs

1 cup of Splenda

3 tablespoons of Brown Sugar Twin

½ teaspoon ground cinnamon

1/8 teaspoon of freshly ground nutmeg

1 teaspoon pure sugar free vanilla extract

1 cup of sugar free chocolate, melted

¼ cup of diet orange soda

1 cup of half and half

1 cup of heavy cream

8-10 day old slices of low carb bread (make sure to cut these in ½" cubes)

1 cup of sugar free chocolate chips

Start by preheating your oven to 350 degrees. Also make sure you have on hand a 6 cup loaf pan. We are going to grease it with butter, or if you like you can use Pam. I prefer to use Pam that has flour incorporated into the spray. But whatever you decide to use should work.

In a large bowl, mix together the eggs, sweeteners, nutmeg cinnamon, melted chocolate, vanilla, and the diet soda. Whisk together these ingredients until the mixture is very smooth. Add the half and half and the heavy cream as well to the mixture. Next you are going to begin by adding the bread to the mixture. Hopefully you cut your bread into ½" squares earlier. Add them to the mixture and allow them to sit for around 15 minutes to soak up the mixture.
