Whether You Spell it Barbeque Sauce Recipes, Barbecue Sauce Recipes or Just Simply Bbq Sauce - Nothing Brings Out Flavors like the Sauce!
SUNRISE SAUCE
1 cup White Vinegar
3/4 cup Ballpark Mustard
1/2 cup Water
1 Yellow Onion, minced
1/4 cup Pureed Tomatoes
2 Tbsp Garlic, minced
2 1/2 tsp Paprika
1 tsp Salt
1/2 tsp White Pepper
1/4 tsp Red Pepper
1. Mix ingredients in saucepan and simmer over low heat for 30 minutes to blend flavors - stirring regularly.
2. Cook until until the onions become very tender and liquid has reduced by half.
3. Cool and serve. Use as a basting sauce or finishing sauce. Makes about 1 1/2 cups.
BEARNAISE SAUCE
2 Shallots, minced
1/2 Tbsp Tarragon
1/2 tsp Basil
2 Tbsp Oil
1/4 cup Cooking Sherry
2 Tbsp Tomato Paste
1/2 cup Butter, cut into Tbsp
3 egg Yolks
1 1/2 Tbsp Lemon Juice
Salt to taste
White Pepper to taste
1. In a small saucepan, heat oil until it shimmers - saute shallot's, tarragon and basil until slightly soft. Add vinegar, sherry and tomato paste. Bring to a boil until it becomes a paste and melt in half the butter. Turn down heat and keep liquid at the ready.
2. Whisk egg yolks in a double boiler - whisking constantly until eggs are smooth and fluffy. Remove immediately and whisk in cold butter 1 Tbsp at a time. When smooth again, drip in reserved liquid and lemon juice, whisking continuously.
3. Salt and pepper to taste. Makes about 1 cup.
