Review of Gella's Diner & Lb Brewing Company in Hays, KS
In an attempt to revitalize the downtown, historic district several businesses have restored buildinsg in Hays. One of our favorites is Gella's Diner. Also a brewery, this restaurant has an extensive menu with classic, as well as local, takes on food and several different brews.
In an area where German food is often duplicated and imitated, this restaurant can truly deliver. However, there are some special takes on several of the menu items. Local favorites included on the menu include a fried bologna sandwich and a smother bierock. If you're looking for an appetizer, the grebble, or fried bread served with pesto and maple syrup is a great choice. Those of us with German grandparents have had these treats at home, but now they are available to everyone.
As for the beers, they offer a sampler with eight of their house brews. However, most people quickly choose a favorite. The light raspberry wheat is always good, and, if you prefer a stronger, dark brew, you should try the oatmeal stout which has won both a gold and silver medal at The Great American Beer Festival. If you prefer a non alcoholic drink, they also brew their own rootbeer in house and make a great rootbeer float.
If you're looking for healthier options, their are several choices on the menu. They offer salmon, grilled chicken, and several salads. If you're splurging for the meal, you should definitely try the french fried green beans or the sweet potato fries and the home fried steak. If you're looking for a local taste on dessert, the german chocolate cheesecake definitely won't disappoint.

Although it may not be a completely accurate restoration, but the outside of the building as well as the inside were completely redone before the restaurant opened. The bare beams and wooden floors give the building a classic look and the large windows allow for an open feel.
