If you're anxious to make that signature dessert and eat it too, it might be high time to track down some healthy but tasty creations. Fourth of July Fruit Pie

1 sugar-free angel food sponge cake (preferably molded into a flan-style cake, or cut into slices)

3 tbsp. sugar-free strawberry jam

8 oz. lowfat vanilla yogurt

1 pint strawberries

1 cup blueberries

½ fat free whipped cream

Cut the cake into 2-inch slices and lay out in a pie plate. Brush with sugar-free strawberry jam. Layer the yogurt and fruit on the sponge cake and refrigerate overnight. This is easy to assemble and tastes like a delicious fruit and yogurt parfait. Alternate the blueberries and strawberries for an eye-catching patriotic ensemble!

Fourth of July Cheesecake

This will become a fast favorite, so make sure you save a slice for yourself before sharing with the masses!

2 packages fat free cream cheese

1/3 cup splenda

2 cups fat free whipped cream

1 graham cracker pie crust (sugar free)

2 cups strawberries

1/3 cup blueberries

Beat the cream cheese and sugar together on medium speed in an electric mixcer. Mix in the whipped cream. Spoon the mixture onto the crust and refrigerate overnight. Arrange the fruit in a flag shape or other creative design. Enjoy!

If you must indulge in a cool treat for the barbeque, enjoy a low carb parfait by using fat free frozen yogurt and layers of fresh fruit:

Alternate scoops of frozen vanilla and strawberry yogurt with blueberries in a tall glass. Top with sugar free strawberry syrup and a dollop of fat free whipped cream.
