10 Healthy Whole-Meal Salads Your Whole Family Just Might Eat

If you've been trying to get your family to eat more leafy greens, salads are a perfect way to do just that! The only problem is that usually salads either get demoted to a lowly side dish, or even worse- not eaten at all! This article includes ten salads that can stand as a whole meal, that taste great, and that might actually stand a chance at being eaten by your entire family!

1.Asian Chicken Salad
Asian Chicken Salad is a favorite in my house, and even my 16-month old will eat it (without the nuts, of course!) To make this salad meal-size for 4 people you'll need: one head of iceberg lettuce, one head of romaine lettuce, 4 cooked and chopped boneless skinless chicken breasts, ½ cup of toasted almonds, 1 cup of mandarin oranges canned in 100% juice, ½ cup of shredded carrots, and enough Asian Sesame Dressing (Kraft makes a great one!) to evenly coat the entire salad. Just simply toss all of the ingredients together and this salad is ready to go!

2.Greek Salad
Greek Salads have a strong flavor that may take some getting used to by the younger ones in the family, but they're delicious and full of nutrients! To make this salad meal-size for 4 people you'll need: one head of iceberg lettuce, one head of romaine lettuce, 1 ½ chopped tomatoes, ¾ cup chopped cucumber, ½ cup chopped red onion, ½ cup chopped kalamata or black olives, 1 cup reduced fat feta cheese, and enough Greek Salad Dressing (Ken's Steak House makes a great Greek dressing!) to coat the entire salad. Just simply toss all of the ingredients together and this salad is ready to go!

Good suggestions. I've not seen any authentic bottled Greek dressings though. An authentic dressing is much more simple and it is homemade: lemon juice, vinegar, olive oil or a combination of these. I love salads and could quite happily live on them Sophie
