It's all natural. It's stone ground. The box proudly proclaims that Hodgson Mill Whole Wheat Buttermilk Pancake Mix is "rich in whole grain". It's positioned as the healthy way to make your morning flapjacks and its available at major grocery stores and health specialty joints. With millions of people looking for healthier ways to eat, Hodgson Mill is likely to see a big sales spike of its pancake mix. There's only one hurdle the stuff needs to clear in order to be an unprecedented breakfast success: Is it any good?
Well, if you want to make fluffy pancake pillows that emulate those of the best breakfast restaurants, you'll be disappointed. In all honesty, if you just want to whip up some pancakes for the family on a Sunday morning, you might still be a little non-plussed. Hodgson Mill's whole grain pancake mix straddles the line that separates great flapjacks from grain patties.
It isn't tough to make some pancakes with the mix. You'll need a little milk, an egg and a bit of vegetable oil in order to produce 6-8 mid-sized cakes. Once you add the liquids to the batter mix, you'll need to take a five-minute break while the concoction stands. I imagine this delay is designed to allow the fluids to penetrate the coarse grainy batter mix. After the timer goes off, you pour your flapjacks onto a hot griddle and treat them the same way you would any other pancakes.
You'll probably like the smell. That's one nice thing about whole grains, they do tend to have a more stimulating aroma than bleached, enriched flour. You'll probably like the appearance, too. Hodgson Mill pancakes turn a perfect golden color and look just as good as anything you'd find in a restaurant.
With your salivary glands in overdrive, you'll eventually want to taste one of your warm creations. This is where things start to do downhill.
