You can make sausage gravy over biscuits that are nearly fat free. It does take a wee bit of effort and planning but it can be done. My daughter calls this healthy "Man food". To me it's just a brunch meal or supper that'll stick to your ribs for an extended time. The Queen Goddess calls this an expanding meal since it seems to expand after eating it.

Sausage

1# 90% lean ground turkey

1 Tablespoon sage

1 Tablespoon garlic powder

1 Tablespoon salt

1 Tablespoon black pepper

2 + Tablespoon water

Mix in a bowl and set aside

Gravy

1 can fat free cream of celery soup (do not dilute}

1 can fat free cream of tomato soup (do not dilute}

1 can fat free cream of mushroom soup (do not dilute}

1 can beef broth

1 Tablespoon Worcester sauce

1 Tablespoon Kitchen Bouquet

Mix in bowl and set aside

Additional Ingredients

1 Cup diced celery

1 Cup diced onion

1 Cup diced green pepper

1- 4oz can mushroom stems and pieces drained

1 Cup frozen peas rinsed

Directions

Brown sausage add onions, celery, green peppers saute' till near soft. Add gravy and mushrooms simmer till warm, add peas. Cover and turn to warm till biscuits are done.

Biscuits

2 Cups all purpose flour

1 Tablespoon baking powder

2 Tablespoon garlic powder (optional)

¼ Cup plain yogurt

¾ Cup soy milk {skim cows milk will work)

Directions

Preheat oven 475. mix ingredients till dough is formed, kneed 25 times, press or roll to about 3/8" thick. Cut with floured edge of glass or biscuit cutter. Place on cookie sheet and bake 10-15 minutes or till golden brown.

Serving Suggestions

My Queen Goddess prefers to split a biscuit, place on a plate, drown it in sausage gravy. My Grandson Mike likes his gravy over home fries and his biscuit with butter and grape jam. Uncle Hump Flanagan likes his sausage gravy over pancakes and his biscuit with cream cheese and strawberry jam. My choice would be served like the Queen Goddess plate only add a couple of poached eggs, a few fried Jalapenos, and some sliced ripe red tomatoes on the side. Don't fergit the Columbian coffee.

Thanks, Alban! But whoa!- do I really have to make my own sausage? :-) I can't believe soup is the base! (Makes sense, though.) I've never had it with the vegggies. It would make for a healthy dinner. Thanks for letting me know about this- I guess sausage gravy and biscuits isn't just for breakfast anymore!

Woohoo! My husband loves this kind of food! I say "this kind of food" because I eat tofu, peanut butter, carrots, and other snacks. He prefers "real food."

Oh Yum. I love biscuits and gravy, but without my gall bladder have been unable to handle the grease that so often comes with them. You've given me a new way to enjoy an old favorite! Thank you!

Gravy and biscuits, yum, but I've never had any healthy ones. Great information. BTW - my sister loves it when I send her your lower fat, healthier recipes. (She cooks more than I do!) Thanks for the recipe.
