How to Prepare Vegetable Pulav.

The preparation is ideal for four persons.

Ingredients required :

Basmati rice - 250 gms
Vegetables - 250 gms (carrot + potatoes + beans + beetroot + cauliflower) You can add any vegetable you like.
Mint leaves
Coriander leaves (if available)
Ginger + Green chillies + Garlic paste - Take a piece of ginger, two green chillies, two pods of garlic and crush it together)
Green Chillies - Minimum 5 Green Chillies (It will not be too spicy)
One or two - Elaichi pods with seeds
Cloves - Two to three
2 Onions
3 tomatoes.
Ghee or oil - 3 or 4 tablespoons
Curd - Two to three spoons.
Salt to add.
You need not add any color as the vegetables will give the pulav its color.

How to prepare :

Take the vegetables of your choice. Cut them into pieces, thin strips or small pieces as you wish. Now measure the basmati rice. Take a small glass. Measure the basmati rice. Note down the number of glasses of rice that you get. This number will help you to decide how much water should be added. In preparing Vegetable Pulav the correct number of glasses of water helps to prepare Vegetable pulav with the right taste.

Take the basmati rice and fry them with little ghee in the frying pan. After turning it on the frying pan for few minutes (till the rice gets heated) take it away and spread it on a plate and keep it aside. Take a piece of ginger, two or three green chillies and few pods of garlic. Crush them. Don't smash.

Pour ghee in a thick bottomed vessel and keep it on a slow flame. Once the ghee gets heated put the crushed ginger, chillies, garlic paste. Then add the mint leaves and coriander leaves. You need to crush the mint leaves. You can add the mint leaves directly. Then add the onions and tomatoes. Next add cloves, elaichi also now. Once the onions and tomatoes are cooked, add the vegetables. Add salt to the vegetables. Let the vegetables cook for five minutes.

Once the vegetables are cooked, add basmati rice to it. After few minutes add the exact glasses of water.

Interesting. You might try adding karapilai (curry leaves) and removing the thair (curd).

Just yesterday, I had tasted your delicious pulav....mmm yummy...and asked you for the recipe and lo! I find the recipe posted here. Thanks a lot for the quick response. Would definitely like to try it out soon.
