The ingredients you will need are these:2 packages of cream cheese
A bundle of long green onions (I usually use about three stalks, only the white parts.)
1 package corned beef (I use budding meat)
1 package beef (I also use budding meat)
The first step is to get out a large bowl, large enough so that you have some extra room when the ingredients are added for mixing. Place the two packages of cream cheese into the bowl. Using a cutting board and a sharp knife cut up the corned beef and the beef. I like to cut them into tiny squares. Make sure these are not too big because its tastier if they are little. Next place the beef into the bowl with the cream cheese. Wash the onions in cold water and then proceed to the next step.
Start to slice the onion into really tiny pieces. If you do not do this believe me your cheese ball will have a horrible texture to it. Make sure that you only cut up the green part of the onions for this. I usually use about three stalks for mine. You really don't need a lot of onion it just gives it a little taste and makes your cheese ball look more visually appealing. Then place the onion into the bowl with the corned beef, beef, and cream cheese.
Now it is time to mix, this is my favorite part. If you have children at home this is a great recipe to make with them because the mixing is messy and fun. What you want to do is take your hands and squish the cheese around the beef and onions. This is really simple all you are doing is mixing up the ingredients. Make sure that there isn't too much onion at this point. Sometimes while mixing I realize I have added a little too much of one ingredient. It is really simple to take the ingredients out if this happens to you.
After everything is mixed up really good it is time to shape it into a ball. You use your hands for this too. Shape it into a ball just like you would a piece of clay. You should then wrap it in plastic wrap or put it in a Ziplock container and put it in the refrigerator for two hours. That is it, very easy I know. This is very good served with crackers, such as chicken in a biscuit. I hope you enjoy one my favorite recipes.
