Easy Foil Pouch Recipes Perfect for Cooking Meals Over a Campfire

Campfire meals are the perfect meal to cook in a pouch. Pouch meals are contained in foil and perfect for cooking over an open campfire. Ham and Potato Bake:
Canned Ham (Diced)
Potatoes
Onions
Carrots
Green Peppers
Garlic
Salt and Pepper
Grated Cheese
Brush heavy foil with butter. Add thinly sliced veggies and diced ham. Seal the foil into a pouch. Put on hot coals, turning often. Bake for about 25 minutes. After opening pouch, sprinkle with cheese.

Vegetable Medley:
Ingredients:
1 onion, peeled and quartered
12 baby new potatoes, quartered (Or you can use regular potatoes)
4 medium zucchini, cut into 1inch chunks
2 tablespoons olive oil
2 cloves garlic, sliced
4 sprigs rosemary, leaves removed
1 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
In a large bowl, combine the onions, potatoes and zucchini. Drizzle with the olive oil and mix again. Add the sliced garlic, rosemary and salt and toss to coat vegetables. Do not cook the vegetable in the pouch directly on the coals. Rest the on a grate or stone placed as close as possible to the coals. Allow to cook about twenty minutes or until done.
Directions:
Brush the foil with butter or spray with Pam. Tear off a piece of foil large enough to hold the vegetables. Place the vegetables on the foil and bring fold up the sides to form a room pouch. Place the foil pouch on a hot grill or in a preheated 425 degrees F oven and roast until potatoes are tender and caramelized, about 25 minutes.
