How to Prepare a Healthy Lunch the Fast and Easy Way

Do you want to eat healthy but don't have the time to prepare your meals? I'd like to share with you how you can have a healthy lunch ready to take to work in just seconds. Yes, I really mean seconds.

Chicken is one of the healthiest meats, especially when you eat the chicken breast. The problem with chicken is it can turn out really dry especially if you try to microwave it. The healthy lunch I'm referring to is Chicken Breast and Vegetables.

What you need to purchase

I purchase the frozen pre-cooked and pre-seasoned chicken breasts. I buy these at Wal Mart but just about any grocery store will sell prepared meat. The pieces of chicken I purchase are small but is most likely the recommended portion. When you buy it frozen and pre-cooked, the meat is extremely juicy.

Select the frozen vegetable of your liking. I usually pick broccoli and cauliflower mixture or peas and carrots as these are the best when you microwave them. I also buy the large bags so I will have some for the entire week or longer.

Preparation

You need a microwavable dish, preferably something your chicken and vegetables will fit in. In the morning before work, I throw in a frozen chicken breast, pour in my frozen vegetables and sprinkle some lite salt on top. You can take the salt to work with you if you prefer to add it after you heat your meal.

I put this container in my lunch kit along with a napkin, knife, fork, an orange and a bottle of water. All of this I put in my lunch kit the night before.

Cook

After the meal has sat in your lunch kit, it has already begun to thaw. Loosen the lid on your microwavable container and heat on high for 3 minutes. Remove from microwave and remove lid. Be careful because the steam from the container can burn you.

Eat

Well, that's it. Just relax and eat your healthy and tasty meal.

This can be done for dinner also but we usually have more time to prepare our dinner than we do our lunch, especially if you work full time away from the home.

Great idea! I cook my husband lunch for him to take to his office its cheaper and healthier than buying fast food every day or just eating a sandwich.

This is a really good idea. When I worked outside the home, I used to take healthy leftovers to work like couscous or a stirfry and then heat it up in the microwave. It beats sandwiches! Sophie
