Recipe for Rosemary Roast Chicken Stuffed with Potatoes
Ingredients:
1 WHOLE CHICKEN ( ANY SIZE YOU WISH)
2 PACKS FRESH ROSEMARY ( can be bought in small packs in supermarkets)
3-4 medium size Russel Potatoes ( if you wish, you can mix the potatos with 1 sweet potatoes)
Honey
Salt
Black pepper
Preparation Steps:
1. Wash and clean the chicken with 1/4 cup of salt, and placed on a baking tray.( press the chicken flat down on the tray so it can be cooked evenly)
2. Mix, 1/4 cup salt, 1/3 cup sugar, 1/2 cup honey, and 1 pack of rosemary leaves in a mixing bowl and mix it well till all ingredients are mixed together evenly.
3. Pour 3/4 the mixture onto the chicken and rub it the mixture all over the whole chicken including the inside if the chicken.
4. Leave the chicken to marinate for at least 4 hours, i usually marinate it over night in the refrigerator.
5. Wash and peel the potatoes' skin then cut it into cube sizes ( sizes of the potatoes is up to ur own judgement usually baased it on the size od the chicken)
6. Boil the potatoes till its half cooked. Sift the potato dry and pour the remaining mixture that was used to marinate the chicken onto the potatoes and mix well.
7. Stuffed the chicken with the potatoes and and insert 2 stalks of rosemary leaves into the chicken.
8. Lightly glazed the chicken with honey and pour a 1/2 cup of olive oil on the chicken.Then use a piece of foil paper to cover over the chicken to prevent the skin from getting burn while baking.
9. Put the chicken into the preheated oven at 200 Degree celcius for 20 minutes then turn over the chicken turn over the chicken and bake for another 20 minutes.( make sure u havwe the foil paper cover over the chicken while baking.
10. Then turn the chicken over again once more and glazed it with honey and pour 2 table spoon of olive oil and bake it for another 10 - 15 minutes or till the chicken turn golden brown colour. ( this time bake without the foil paper)
Serve the chicken with salad.
And if you do not finish the chicken do place it into the refrgerator and on the next day you can peel off the chicken meat and make a good chicken sandwich.
