Great Gluten and Dairy Free Treats for the Whole Family

Baking gluten and dairy free is not easy to do. In most cases you cannot simply replace all purpose flour with rice flour. However, as I have experimented with various baking recipes I have found that you can create moist delicious cookies using gluten free and dairy free products, as long as you know a few tricks. One of my favorite concoctions that I personally came up in my kitchen is the following recipe for Peanut Butter Oatmeal Cookies. This recipe creates a double batch of cookies. I usually bake a half dozen cookies and then freeze the remaining dough in logs wrapped in plastic rap. Then when I want to make more I simply cut and bake what I need.

Gluten Free Dairy Free Peanut Butter Oatmeal Cookies

Ingredients:

1 ½ cups of melted margarine

1 cup of gluten free peanut butter (I use Smart Balance because it has added Omega 3)

2 cups of sugar

1 cup of hard packed brown sugar

1 ¼ cups of soy flour

1 ¼ cups of brown rice flour

4 cups of gluten free oats (read the label to make sure the oats weren't manufactured with gluten products)

4 eggs

2 tsp vanilla

½ cup of Chocolate Dari Free Milk powder

2 tsp of baking powder

1 tsp of baking soda

¼ tsp of salt

Directions:

Pre heat the oven to 375 degrees F.

Mix melted butter, peanut butter, sugar and brown sugar together, eggs and vanilla. This will create a loose mixture. Next stir in baking powder, baking soda and salt. Stir in brown rice flour, soy flour and Dairy Free powder until incorporated into the liquid batter. Finally stir in oats.

Line your cookie sheet with aluminum foil and spray with a non-stick spray. Scoop out cookies onto the sheet and bake between 15 and 20 minutes. Because ovens vary, watch the first batch to see how quickly they bake in your oven. Also the larger the cookies you make the longer they will need to bake.

Variations

There are several additions that you can add to your cookies. Since chocolate chips have casein in them you can make a mock chocolate chip cookie by adding carob chips to the above batter. If you enjoy nuts you can add chopped peanuts or walnuts to the cookie batter. You can also add raisins and coconut to the batter to create a great holiday cookie.
