My mom used to make this diet soup that had a main ingredient of cabbage. You could eat as much of this soup as you wanted and loose weight. The first day of the diet you thought, "this isn't so bad", but by the 4th or 5th day you were choking to get it down. The wisdom in the Cabbage Soup Diet was that it burned more calories to eat and digest it than any other diet. Still, after a week it had you looking for a steak dinner with a baked potato and apple pie for dessert.

Well this recipe is not on your diet but it will get your family eating cabbage. Here are the ingredients.

1 large to medium cabbage

4-6 pieces of bacon

1 medium size onion

Half a green pepper

1 medium tomato

Fresh garlic or granulated garlic to taste

Salt and & pepper to taste

1 tbsp. sugar

1 large skillet with cover

Cut up your cabbage in pieces, small but not as small as Cole Slaw. Cole Slaw size is shredded and too small for this recipe. Chop your onion and green pepper and tomatoe, then set aside with your cut up cabbage. Also cut and set aside fresh garlic if you are using it.

Fry your bacon until crisp but not too crisp. Drain bacon and set aside but leave the bacon drippings in the pan. Throw in your chopped onion and fry until onion becomes clear. Add fresh garlic and fry at this point along with onion. Note here that it is the bacon and drippings that make this recipe.

Once onion is cooked throw in your chopped cabbage. Hit this mixture with Salt and Pepper and cover for about 5 minutes. Your cabbage will be very full in the pan but don't worry, as you cook it the cabbage will shrink and the lid will fit on the frying pan much better. The cabbage will cook down and the juices will mingle with the other ingredients.

Uncover and stir, then cover and cook for another 5 minutes. Then add bell pepper, and chopped tomato to the top of mixture. Cover and cook for another 5 minutes. You want to leave the tomato and bell pepper on the top of the mixture and not mix to the bottom of the pan because you do not want to overcook them.

Takeaways
  • Many people hate cabbage but I get people to love cabbage with this recipe.
