Banana Nut Bread is a favorite in many families. You can make many variations to the original recipe to make a bread that will satisfy your tastes. You might want a recipe that includes chocolate chips, or you might want one that does not include nuts. There are many variations that I will get you started with. I included the original banana nut bread in the family gift baskets I made for Christmas last year. I was told by one of the families that their children ate the banana nut bread before they even got to taste it.

Banana Nut Bread

1 ¾ cups of all-purpose flour

2 tsp of baking powder

¼ tsp of baking soda

½ tsp of salt

1 cup of sugar

½ cup of chopped pecans or walnuts

2 eggs

1 cup of mashed bananas

½ cup of vegetable oil

Mix together flour, baking powder, baking soda, salt, and sugar. Make sure this is mixed together before adding your wet ingredients. Next add your eggs, bananas, nuts, oil, and vanilla. Stir until they are combined well. Preheat your oven to 350 degrees Fahrenheit and grease two 8 X 4 inch loaf pans. Pour the batter into your pans and then bake them for 45 to 60 minutes. I suggest testing them with a toothpick to ensure they are baked through. Cool on wire racks for 10 minutes and then remove from the pans.

If you would like a really moist loaf of banana bread this next recipe is for you!

Sour Cream Banana Bread

¾ cup of butter

3 ¼ cups of sugar

6 ripe bananas, mashed

1 (16 oz) tub of sour cream

2 tsp of vanilla

3 tsp of ground cinnamon

½ tsp of salt

3 tsp of baking soda
