Thanksgiving, Christmas, and New Years, provides a great reason to experiment with cooking styles and traditions during the holiday season. Besides the typical turkey and ham main course, side dishes will provide a plentiful spread and will please the diverse taste buds of your guest.

The following are easy to follow soul-food style recipes for any occasion.

CORN BREAD DRESSING

Versus Stove Top Stuffing --this recipe provides a more southern style taste that sticks to your bones, and goes great well with cranberry sauce.

Ingredients:

Serving of 15-20

2 boxes of Jiffy Corn Muffin Mix

2 boxes of Yellow cornmeal

4 eggs

1 tsp of baking powder

1 Bell & 1 Red pepper

1 Green & 1 Yellow onion

1 stalk of Celery

4 16oz Chicken broth

Sage (add to taste)

Poultry seasoning (add to taste)

Oil

Step 1

Pre heat oven 350 degrees

Wash and chop up the vegetable ingredients and set aside.

Step 2

Combine Jiffy corn muffin mix, cornmeal, eggs, and baking powder into bowl and mix.

Step 3

Pour oil into large baking pan, covering the entire pan. Put pan into oven until oil is hot.

Step 4

Remove pan. Pour Corn Mix into pan. Put pan back into oven cooking the bread thoroughly.

Step 5

Put oil in a pot- Sauté 1/2 of the vegetable mix.

Step 6

Cut bread into squares (or crumble bread). Add squares to sauté vegetable pot.

Add Chicken broth, ½ chopped vegetables, sage, poultry seasoning

and stir.

Step 6

Pour dressing mix into baking dish and bake for 45-60 minutes, stirring after 30 minutes.

QUICK GREENS

Ingredients

Bunches of Greens (your choice)

1 onion per 2 bunches

1 bell pepper per 2 bunches

1 can of Beef broth per bunch

Pack of Bacon

Oil

Step 1

Wash and drain greens. Cut Greens. Set aside.

Step 2

Cut up bacon slices. Set aside. Cut up onion and bell pepper.

Step 3

Heat large pot on stove with oil. Once hot, add bacon. Once bacon is cooked, add onions and peppers.

Step 4

Add Cut greens to pot. Stir-fry.

Step 5

Pour in beef broth covering greens. Simmer to your desired texture. At least 30 mins.
