Fresh Cranberry Relish Recipe: Last Minute Holiday Side Dish

This is an incredibly fresh and fruit tasting fresh cranberry relish recipe that holiday guests will enjoy. The fresh and light flavors contrast nicely with the heavy holiday meal of turkey or ham. This easy cranberry relish recipe can be made at the last minute, or
 left to marinade for a few hours in the refrigerator. It is also a diverse recipe that can be modified depending on which fresh fruits and holiday ingredients you have available.

Ingredients for Cranberry Relish Recipe

two cups of fresh cranberries
half a cup of fresh or canned pineapple
one granny smith apple
one cup of Mandarin oranges
two tablespoons of honey
one quarter cup of chopped walnuts (optional)
half a cup of cranberry juice

Preparation for Cranberry Relish Recipe

Open the bag of cranberries and pour into a strainer or colander. Rinse the cranberries. Look for and remove any stems, twigs or other natural items which may have made their way into the bag of cranberries.

Chop the cranberries into small pieces. If you use a food processor, do not turn the cranberries into mush, otherwise it will appear inedible.

Peel and core the apple, and dice into very small pieces

Also drain the pineapple slices if using canned. Chop those as well for the fresh cranberry relish. Fresh pineapple is even better, if you have some or bought some.

Also chop of up walnuts, unless a guest has a food allergy. If you are uncertain, just cut the fresh cranberry relish mix in half and add nuts to only one batch.

For a sweeter dish, add sugar to taste. Or substitute the granny smith apple for a sweeter apple like a Red Delicious or a Macons.

Serve the relish with a slotted spoon, so the cranberry juice does not make a dripping mess on the plate. The addition of cranberry juice will give the side dish a real cranberry taste, and add a festive cranberry color, naturally.
