Quiche Recipes for Leftover Christmas Ham

Christmas dinner is over, and you have leftover ham. You can give some away to your family members. Make ham sandwiches for lunch. But what are you going to do with the rest of it? There are a lot of dishes that you can use it in such as fried rice, ham and beans, scalloped potatoes and ham, ham and cheese quesadillas, and ham pot pie. Here is one terrific idea, make a quiche. You can make that leftover Christmas ham stretch a long way. Here are a few quiche recipes that you can make with ham Enjoy.

Asparagus Ham Quiche
2 packages of frozen asparagus, thawed
2 cups of cut-up cooked ham
8 ounce package of shredded Swiss cheese
½ cup chopped onion
6 eggs
2 cups milk
1 ½ cup baking mix
¼ teaspoon black pepper

Preheat your oven to 375 degrees. Grease 2 pie plates. First layer the asparagus. Next layer the ham, cheese, and the onion. Beat the 6 eggs with a mixer. Add the milk, black pepper, and the baking mix to the eggs. Beat together. Pour half of the liquid mixture over each pie plate. Bake the Asparagus Ham Quiche for 30 minutes.

Ham and Potato Quiche
4 eggs
1 cup milk
1 ½ cup of cut-up cooked ham
¾ teaspoon salt
1 cup flour
½ cup shortening
4 tablespoons water
1 potato, baked in microwave,
cut in cubes
1 cup grated mild cheddar cheese
¼ teaspoon black pepper

Find a large bowl. Add the flour, shortening, and only ¼ teaspoon of the salt. Mix with fork until it is crumbly. Sprinkle just enough water over the top and stir until the dough starts to form a ball. Roll dough onto wax paper. Make about a 11 inch circle. Put crust into a pie plate and trim the edges. Layer the cut up ham, baked potato, and the mild cheddar cheese on the crust. Next mix your eggs, milk, ½ teaspoon of salt, and ¼ teaspoon of pepper together. Pour the egg mixture over everything in the pie plate. Bake in a 350 degree oven for about 45 minutes.

Ham and Broccoli Quiche
1- 9 inch pie shell
1 cup shredded Monterey Jack cheese
1 ½ cups cut-up cooked ham
1 cup chopped cooked broccoli
3 eggs
1 cup milk
2 teaspoons flour
¼ teaspoon black pepper
