A Holiday to Remember

Holiday Greetings! There's always something cooking in my kitchen, especially during the Holidays. Needless to say at this time of year, I really like to 'do my thing'. Know what I mean? So, just in time for the Holidays I've created some great new dishes to please your palette and satisfy your cravings. For a meal to remember, check out these tempting entrees.

Squash Medley

5 md Summer Squash

3 md Acorn Squash

2 tsp Salt

1 large Spanish Onion (chopped)

Season pepper

Salt-free Garlic & Herb

Wash squash and cut into bite size pieces (remove seeds only from the acorn squash). Place in pot with just enough water to cover. Cook until vegetables begin to boil. Add onion, salt and other spices. Cook about 15 more minutes or until vegetables are medium soft. Drain excess juice, and serve hot, with Garlic Mashed Potatoes and Roast Chicken Deluxe (recipes follow).

Garlic Mashed Potatoes

12 md White Baking Potatoes

2 cups boiling water

Minced Garlic flakes

Parsley flakes

Salt-free Garlic & Herb

2 pats margarine

Wash potatoes, leave skins on and place in large pot with just enough water to cover. Bring just to a boil and remove from heat. Drain and let potatoes cool before peeling. Place peeled potatoes in large bowl, add boiling water and mash. Season with spices; add margarine and serve hot. Yield approx: 12 1 cup servings.

Roast Chicken Deluxe

10 to 12 lbs roasting chicken

Cooking spray

4 tbs olive oil or injectable marinade

Season salt

Season pepper

Salt-free Garlic & Herb

Sage

Line shallow baking pan with foil; coat with cooking spray. Wash chicken thoroughly and remove giblets (set giblets aside for gravy, recipe follows). Coat with olive oil or inject with marinade; season with spices. Cover with foil and bake at 425 degrees for approx 1 hour. Baste with drippings and bake for 1 to 2 more hours or until golden brown. (Should be tender and juicy.) Yield approx 12 to 15 servings.

Season pepper

Salt-free Garlic & Herb

Sage

3 tbs pan drippings

1 sm cn Mushroom or Beef Gravy
