Hot souffles often have received the negative reputation that they are difficult to make. The reputation that they have earned is well deserved because of several of the experiences I have had in making them myself. The Carrot & Potato Souffle that I am going to show you how to make today happens to kill that statement a tiny bit. This dish is very simple to make and also looks mighty impressive when you finish creating it. Like anything that is good and hot, you need to make sure you serve this dish when it comes out of the oven. This is because all of the well packed contents of the Carrot & Potato Souffle taste best hot, similar to any other souffle that you may have or may have never had.

Carrot & Potato Souffle:

Ingredients:
-2 tbsp of butter, melted
-4 tbsp fresh whole-wheat bread crumbs
-3 mealy potatoes, baked in their skins
-2 carrots, grated
-2 eggs, separated
-2 tbsp orange juice
-1/4 tsp grated nutmeg
-Salt & pepper
-Carrot curls, to garnish with

Step One:

One thing that may of excited you right away is that there is not a lot of ingredients needed to create this dish. However, there is still a bit of preparation time and cooking time required to make the Carrot & Potato Souffle. You will begin your process by brushing the inside of an 3 1/4 cup souffle dish with the melted butter. Make sure that the butter is evenly spread throughout the entire pan. This will help with the baking process and help the souffle from sticking to the dish. You will then need to sprinkle about three-quarters of the bread crumbs over the base and sides.

Step Two:

Cut the baked potatoes in half. Take the cut potatoes and coop the flesh out of them. Place the flesh into a large mixing bowl. You will then need to add the carrots, egg yolks, orange juice, and nutmeg to your potato mixture. Grab a large stirring spoon and begin to mix all of the bowl's contents together. While you do your mixing, take your salt and pepper and sprinkle in your desired amount. It is important to continue stirring your contents as you do this to ensure that your salt and pepper is evenly mixed with the rest of the mixture.

Step Three:
