A Taste of India Cuisine: Vegetable Biryani

India happens to have some of the most delicious food that you will ever taste. You might be disagreeing with this statement based on a lot of the stories you have heard in the past. I will agree that there are a lot of odd dishes that they create, but they think the same thing about many of the dishes that we make. One thing that you must know is that they create some of the most wonderful tasting vegetable dishes that you will ever have. My personal favorite is a dish called Vegetable Biryani. The Biryani dish originated in North India and was mostly reserved for use during festivals. The vegetables of this dish are marinated in a yogurt-based marinade.

Vegetable Biryani:

Ingredients:
-3/4 lb cubed potato
-1/4 lb baby carrots
-2 oz okra, thickly sliced
-2 celery stalks, sliced
-3 oz baby white mushrooms
-1 eggplant, halved and sliced
-1 1/4 cups unsweetened yogurt
-1 tbsp grated fresh ginger root
-2 large onions, grated
-4 garlic cloves, crushed
-1 tsp turmeric
-1 tbsp curry powder
-2 tbsp butter
-2 onions, sliced
-1 1/4 cups basmati rice
-Chopped fresh cilantro, to garnish

Step One:

Your first action in making this dish will be to cook the potato cubes, carrots, and okra in a pan of boiling salted water. You will have to boil these contents for about 7 to 8 minutes. What you will have to do next is drain well and place all of the contents into a large bowl. The next step requires you to mix the contents with the celery, mushrooms, and eggplant.

Step Two:

You should grab your unsweetened yogurt, ginger, grated onions, garlic, turmeric, and curry powder and mix them together. Make sure that you mix them together so that all of the ingredients are properly spread around. Grab a spoon and spoon your mixture over the vegetable mixture. Allow everything to marinate in a cool place for about 2 hours. Hopefully you can tell that this dish will take quite some time to prepare, but is well worth the wait.

Okra Gives the dish some KEY flavor. It actually blends well and is needed. If you do not like it, don't worry too much, you will like it in this dish.

A good friend loves Indian fare and I've been encouraged to try it. This sounds like a good introduction - if I can get past the okra. Would zucchini work?
