I have been using the Silpat Nonstick Baking Sheet for more than 4 years and this is a must for any baker. Only recently I bought two new sheets and this was not because of the wear and tear but in course of time they had picked up the odor and looked dull. I got it for around $13 and this lasted mo
re than what I expected. This is basically made of food silicone and fiber glass. Though it is made from food grade material I am a bit skeptical about this rubber like mat. However they do not have any odor and can be used over and again. If you follow the instructions properly, the Silpat sheets can be used at least 2000 times.

The Silpat Baking Mat is a non stick sheet that needs to be spread on the baking pan so that the cookies do not stick to the pan. This really works and gives magnificent results. With this there is no need to grease the pans or spray the oil and still the cookies and baked pastries come out perfectly. Instead of greasing the pan, you can add that amount of butter to the cookies and enhance the taste. This can withstand a temperature up to 482 F and hence there is no need to fear about this mat. Even if the candies melt, the Silpat mat will stay fine without any softening of the sheet.

I like the fact that since it is not coated with any non stick chemical there is nothing bothering me about the peeling of coating or accidental consumption of the non stick layer along with the biscuit. I also use this mat to knead dough for bread and pizza. It is better than using a board because the dough does not stick to the mat and it is easy to clean. I would not suggest you to use mild soap solution because sometimes the silicone has a tendency to absorb strong detergent smell. Moreover it does not require such a treatment. Just wipe it using warm water and run fresh water. Dry it properly before putting it in drawer. These can be rolled and stored like paper sheets.
