The Healthy Choice Country Vegetarian Soup is no doubt the favorite soup of health conscious fitness freaks like me. This is completely vegetarian and it is not like some of the soups out there that claim to be a vegetable soup but contain trace of chicken stock or egg powder to make the broth thick. I like the fact that all the vegetables are natural and the amount of sodium is also relatively less. I find that most of the instant soup bowls have a high content of salt to enhance the taste but it is not good for health.

The list of ingredients show fairly a large number of vegetables and some of these are not found usually in the other vegetable soup. But the problem is that I find only carrot, celery, corn and tomato and the other veggies mentioned in the contents are not be seen in the bowls that I received. May be they are added in the powdered form. This Healthy Choice Country Vegetable Soup is rich in iron, protein and vitamin A. This smells good and tempting with the mild blend of onion and garlic flavor wafting out of the bowl.

The consistency is perfect and is neither thick nor diluted. The veggies do not float and are well mixed with broth. So when a spoon of soup goes in to the mouth you get a rich and satisfying feel of the solid carrots and veggies and the liquid broth. One bowl of this soup contributes only 160 calories and hence this is good for people who are even on restricted diet. A 14 ounce bowl is just the right amount for a single serving and it is the best if taken as a replacement to snacks in between the meals. This is quite filling and does not make you feel heavy.

If you are want to make it rich and add a twist to the otherwise bland tasting soup, garnish it with cheese and add generous freshly chopped parsley leaves and have it along with toasted bread. If needed add fresh cream to make it yummy. This has a typical microwave soup smell and I find that weird synthetic smell in all the microwave bowl soups including the Campbell. However it is not that distasteful and it gets masked after taking two or three spoon.
