I never thought much about mayonnaise until I met Moosh Girl. Mayonnaise had absolutely nothing to do with our meeting but she has become one of my very best friends and she is a mayonnaise freak. This recipe and this article are dedicated to her.

Once upon a time I didn't even know how to spell mayonnaise. That was before I wrote this article. In fact, I found the spelling by doing a Google search for it, spelled it correctly in the title and am now only copying the spelling over and over. To be honest, I wasn't even sure that homemade was one word before I checked it out. Moosh Girl is usually my spell coach but she's not here right now. I think that it is easier to Google search a word to find the correct spelling than it is to use spell check in Microsoft Word. Dictionaries are a thing of the past for me. That's kind of sad, but I digress.

After meeting my good friend Moosh Girl and learning that mayonnaise can be a condiment for nearly anything, I found a recipe and we decided to make our own homemade mayonnaise. Homemade is nearly always better and this recipe is no different. The largest draw back is that if you don't use a preservative the mayonnaise will only last for a week at best in the refridgorator. I know that I misspelled that but I don't have time for a Google search right now.

So here's the recipe that I used:

Homemade Mayonnaise:

Ingredients:

- Two egg yolks (if you want to use the egg whites that's probably alright)
- 1 1/2 cups Oil
- Some salt
- A bit of sugar
- 4 teaspoons lemon Juice (Vinegar will also work)

Tools:

- Blender

What to do:

Mix the egg whites, salt, and sugar in the blender for a little while. Then, very slowly (a drop at a time) add the oil until half of the oil is in the mixture. Then slowly add the lemon juice and the remainder of the oil. It is important to add the oil slowly because mayonnaise is an emulsion, which means that the yolks and the oil doesn't really mix, one envelopes the other. Continue to mix the mayonnaise until it fluffs up and appears to be what it should be.
