3 Easy Recipes for a Cheap and Quick Lunch

Lunch Doesn't Need to Be Difficult

Everybody needs to eat lunch but with time and money coming in increasingly shorter supply, we all could use more quick and easy lunch recipes. I don't know about you but when I take a break from work to eat lunch I need something quick, simple and cheap. I don't want to spend the time
 going to a fast food joint and spending at least six bucks a day just to eat.

In order to get through the workday, I have found that these three easy recipes will keep me going and not lighten my wallet too much. Feel free to work them over any way that you like. As with any simple and cheap recipe there is always room to play around.

Quick, Simple and Cheap Recipe #1:

Microwave lunchmeat and cheese wrap:

This one is always my stand by when nothing else is around. The recipe is basically spelled out in the name. What you need are flour tortillas, which I always like to keep on hand, cheese, and any lunchmeat works great. Simply wrap the ingredients in the flour tortillas, place a paper towel around the wrap (this helps keep the tortilla moist) then put it on a plate and microwave it for about 30 seconds.

I also like to add a little salsa when I have it on hand. If you don't have any cheese, don't fret, use ranch dressing instead.

Quick, Simple and Cheap Recipe #2:

Simple Ramen variation:

Most of you know that Ramen is an extremely cheap way to eat lunch. I always cook my Ramen in the microwave by adding the water then nuking it for about 2 minutes, and then I stir it up and nuke it for another minute. My friend places the Ramen in a bowl then adds boiling water and lets it set for three or four minutes.

My variation on the simple Ramen is to add tuna fish or leftover roast beef. I have also been known to play around with the seasonings. I will leave out the seasoning packet and add my own seasonings, such as lemon pepper with the tuna, or chili powder with the beef.

Your friend who places the Ramen in a bowl then adds boiling water and lets it set for three or four minutes sounds pretty hot.

Interesting. EGGO sandwiches don't sound too appealing to me, but like the idea of the article!
