Spam Has Many Uses Besides the Obvious One

Sometimes when I'm in a bind for something fast to fix for lunch, I grab a can of Spam from the pantry and use it in a sandwich spread that my husband enjoys. Recipe follows.

Depending on how much you think you'll need, use a whole can of Spam or less if you just want to try it once.

Grate the Spam into a bowl.

Grate into the same bowl a small block of cheddar cheese, or you can use half a small package of grated cheese.

If you don't want the bother of using a grater, this can be done in a food processor, but be careful not to overprocess it.

Add Miracle Whip or mayonnaise, mustard, and sweet relish in amounts to suit your taste. This should be just enough to make a spreadable mix. As this is not an exact formula, you can add more or less of any ingredient as you see fit.

Spread some of this mixture onto a slice of bread and cover with another slice of bread. You won't want to use too much or it will be runny, but you want enough to cover the bread about 3/8 inches thick. Again, it's a matter of what you like.

Place the sandwich(es) on a cookie sheet in a hot oven and heat until the bread is toasted. The cheese in the filling will melt and add a nice taste to the sandwich(es).

You might want to check the bottoms of the sandwiches before the top slice browns, as the bottom tends to brown first. In that case, just slip a spatula under them and turn them over to cook a little more.

Any leftover mix will last for several days if kept covered in the frig.

I cannot bring myself to like Spam, no matter how many times I've tried, but I will make this suggestion to friends and family who like Spam. GReat idea. :-)

Sorry you lost me on this one. I HATE Spam, had to eat too much of it during WW2. I still love you though Pat!

I havent eaten Spam since I was a kid. Who knew there were recipes out there for this.
