Atkins Diet Recipe: Buttery Sweet Toasted Walnuts

Being on the Atkins Diet can be challenging especially in the beginning. It might seem like shell shock at first; you can no longer eat the comfort foods that you are used to gorging on. For example, no pasta, no cereal, no sandwiches, no sweets! One might feel as if they're set to fail before they've even begun, or like there aren't many choices left. But I'm here to let you know that there's more than just a lot left; it's delicious, and you'll never miss all of those empty carbs!

So you've decided you're gonna do it this time! This time won't be like the rest, yeah the little voice is talking in the back of your head reminding you of all the goodies you've got in your house, you know, just in case you change your mind. But you've scheduled yourself for some psychotherapy to help get rid of that little voice, gave away the goodies and you're set for success!

Now that you've got the hang of how to do the Atkins diet with moderating your carb intake. You'll need some sweet secret weapons that you can bring out in times of desperation or for holidays when family is all around. Here's a snack idea that you can whip up in a few minutes and it's sure to take the bite off of your hunger and the craving for munchies. So enough talking already here is the recipe:

Buttery Sweet Toasted Walnuts

Ingredients:
3/4-1 cup raw walnuts
1-2 tbsp butter
3 tbsp Splenda
Pinch of salt

Directions:
On medium high heat, warm your butter in a skillet or sauce pan. The butter should cook until it's bubbly but not quite browned. Next add the walnuts. Mix the walnuts around and make sure they are evenly distributed in the skillet or pan. Next add the salt. Make sure to keep the walnuts moving you don't want them to burn. Let them cook for about 3 minutes stirring constantly to evenly coat the walnuts with the melted butter. Last add the Splenda. Sprinkle evenly over walnuts and cook for 1 minute longer.

To finish them off you can sprinkle them on a nice serving dish and enjoy them warm. They are also delicious served on a dollop of fresh whipped cream. You can even add them to salad or dinner dishes. Substitute walnuts for your favorite Atkins friendly nut and it's just as good!
