Atkins Diet Recipes

If you are one of the people on the popular, low carbohydrate Atkins diet, then you may be searching for new recipes to spice up the foods that you are able to eat. Here are a few favorites from Kathleen and Jenna, two friends and two individuals who have been on the Atkins program for a number of months. Atkins diet recipes can be found on many website, so there is sure to be something that will fill your belly while you decrease your intake of carbohydrates.

Kathleen is the mother of one and found that the baked quesadillas worked well not only for her weight loss goals, but also found that her daughter liked them as well. Kathleen stated "I wanted something fast and I didn't want to have to prepare one meal for me and one meal for her (daughter). It took me about 10-15 minutes and we could both eat what I had created."

Ingredients:

2 tablespoons olive oil, divided

1/2 small onion, chopped

1 pound cooked pork roast, cut into very thin strips

1 cup grated Monterey jack cheese

1/4 cup green salsa

1 jalapeno pepper (optional), seeded and finely chopped

1/4 cup chopped fresh cilantro

1/2 teaspoon freshly ground black pepper

1/4 teaspoon salt

(8-inch) Low Carb Tortillas

Tomato salsa

Heat oven to 450F. Heat 1 tablespoon of the oil in large skillet over medium-high heat. Cook onion 5 minutes, until softened. Transfer to a bowl. Add pork, cheese, green salsa, jalapeo, cilantro, pepper and salt. Mix well.

Brush one side of each tortilla with remaining oil. Spoon one-eighth of pork mixture over half of non-oiled side. Fold tortilla in half over filling.

Arrange on a baking sheet. Bake 5 minutes, until crisp and golden. Serve with tomato salsa

Kathleen also mentioned that she uses chicken more often than the pork and was not a fan of the jalapeno pepper.

This recipe has about 7 net carbohydrates and falls in line with the recommended carbohydrates per meal.
