Atkins Diet Recipes: Yummy Meat Pizza

Here is an easy and delicious no-carb Atkins Diet recipe perfect for two. My wife and I make these at least once a week, they are so good!

Since starting the Atkins Diet two years ago, my wife and I have lost an incredible amount of weight. This recipe is just one of many great dinners we enjoy.

What you will need:

- 9" Round Baking Dish
- Mixing Bowl
- One Egg
- Cookie Sheet (with lipped edges to catch the grease)
- One Pound of Fresh Ground Meat (Beef, Turkey or Sausage)
- One Cup of Shredded Mozzarella
- One Can of Pizza Sauce (Usually generic brand sauces have little or no sugar!)
- One Small Red Onion, chopped
- One Red Pepper, chopped
- One 6 oz Can of Sliced Mushrooms
- One Tsp. of Season Salt

First, the Crust.

Mix the egg, season salt and meat in a bowl (The egg is to help hold the meat together once cooked, not a necessity but handy). Pat the meat into the 9" round baking Dish. The meat should be spread evenly on the bottom of the dish, about 1/2" thick. Place the dish into the oven at 450 degrees for 10 minutes. Remove and drain grease.

After the meat is done you can empty the baking dish by turning it upside down over the cookiesheet for a crispier crust. Or you can can leave it in the baking dish.

(Tip: Place aluminum foil on the cookie tray before laying down your crust for easy cleanup!)

Next, the Toppings.

Drizzle the can of pizza sauce over meat crust. Next, spread out the mozzarella cheese over the sauce. Finally add the remainder of the toppings.

Onion, red pepper and mushrooms are only examples. Some favorite toppings include pepperonis, pineapple, bacon and olives. Use your imagination!

Ready to Bake.

Place your pizza back into the oven and bake at 450 degrees for about 10-15 more minutes or until cheese starts to melt and turns golden brown on the edges.

Voila! Its done. Take out your pizza, let it stand for 5 minutes, cut and enjoy.
