Blueberry Scones

Many people, when thinking of the Atkins Diet Recipes, think mainly of meat. Here's one, though, that is different. These blueberry scones are very tasty, and would be great for a Christmas breakfast, brunch, or tea time.

Atkins Diet Recipes--Blueberry Scones


In a food processor, pulse just enough to combine:


1 1/2 cups sifted soy flour or soya powder

3 Tablespoons granular sugar substitute

1 teaspoon salt

1 Tablespoon baking powder

Add:

6 Tablespoons cold, unsalted butter, cut into small pieces

Pulse about 30 seconds until mixture resembles coarse meal.

Place mixture into large mixing bowl and toss with:

1 cup blueberries

2 teaspoons lemon zest

In a small bowl, whisk together till well blended:

2/3 cup cold heavy cream

1/4 cup cold sour cream

1 large egg

Pour over dry mixture and stir with a fork just until combined. Chill the dough for 30 minutes.

Preheat oven to 375 degrees F. Separate dough into 10 equal-sized balls and pat each piece into a disk measuring 2 to 3 inches across. Cut each disk into 2 half-circles. Space evenly on ungreased baking sheet, leaving one each on all sides between scones.

Bake until bottoms of scones are golden brown and tops light golden. Cool on baking sheet set on wire rack or pan to allow air circulation under it.
