Homemade Pizza Recipes: Greek Flavored Chicken, Italian Veggie and Spinach Ricotta

Pizza is a familiar and comforting food. Everyone craves pizza once in a while. When that yearning for a slice or two comes, our first thought is to reach for the telephone. Take-out pizza is both convenient and satisfying, but creating your own pizza combinations at home can be just as simple. Herein are three ingredient combinations I often mix together for my homemade pizzas. Each recipe makes for a tasty blend. When assembling, arrange the components any way you desire, as long as the cheese gets sprinkled on top!

(Note- To make pizza preparation a lot easier, it's good to start with pre-baked pizza crusts (such as a Boboli) found in any supermarket. Other varieties of pizza crust can be prepared to your liking, but the pre-baked crusts work just fine.)

Greek Flavored Chicken Pizza

-small package of chicken tenders, marinated in Greek or Caesar salad dressing, and grilled or fried until cooked through.
- small sliced onion
-Greek olives, pitted and chopped
-roasted red pepper, sliced
-crumbled feta cheese

Spinach Ricotta Pizza

-large tomato, sliced
-1 package (10 oz.) frozen chopped spinach, thawed and drained
-small chopped onion
-crushed red pepper flakes
-ricotta cheese
-mozzarella cheese

Italian Veggie Pizza

-roasted red pepper, sliced
-artichoke hearts
-large tomato, sliced
-black and green olives, chopped
-garlic clove, chopped
-olive oil, spread in a thin layer over crust

*Italian meats, such as salami, pepperoni, or prosciutto can be chopped and added to enhance the flavor of this pie.

Each of these pizza recipe combinations is a great alternative to traditional takeout pizza. They are relatively simple to make, and the possibility of food groupings is limitless. Follow these recipes exactly, or run with the method to create your own style pizza. If you do, share it!
