Cajun Rice A’La Cheap – The cheap meals version of Cajun rice.

1 box instant rice mix, beef
1 can red beans
2 tbs butter or margarine
1 bx cornbread mix
1 egg
3 T buckwheat flour

Prepare instant rice mix according to instructions, by sautéing rice with margarine and adding water and flavor packet upon browning. Drain beans and add to cooking rice/flavoring mix. Add 1 tsp Cajun seasoning.

In a separate bowl, combine cornbread mix with egg, milk, and buckwheat flour. Grease griddle or frying pan, and prepare pancakes out of mixture by frying 1 T of batter on well-greased skillet.

When rice has completed its cooking, place 2 pancake on plate. Spoon 1 T of cooked rice product onto each pancake and roll up together. Sprinkle Cajun seasoning over rolled food.

Variation – omit Cajun seasoning for a nice alternative.

Cheap Platinum Eggs – The cheap meals version of the mini omelet.

8 large eggs
¼ c Milk
½ t Paprika
½ t season salt
½ t pepper
1 t Worcestershire sauce or steak sauce
2 T margarine
5 diced smoky link sausage links or three slices cooked bacon, crumbled
¼ c minced bell pepper (optional)
2 slices American cheese

Mix eggs, milk, dry seasonings, and steak sauce. Whip until frothy and well blended. In a skillet, melt margarine. When margarine begins to look hot, add egg mixture. When the eggs begin to cook at the bottom of the pan, add diced smoky links or bacon. Scrape occasionally until eggs are almost completely cooked. Add bell pepper and American cheese (cut in thin strips.) Fold melting cheese and enjoy.

Why isn't it "always recommended to eat cheap meals"? Is it a problem if you eat cheap meals all the time? I'm very confused!
