Being a mother, I can relate to how difficult it is at times to find a meal or (healthy) snack that children agree with, and will eat on a consistent basis, so after many trial and errors I have found a few interesting meals/snacks that children will love, and the great thing is that they are simple, inexpensive and easy to prepare.

Peas and Saltines- When purchasing the ingredients, it's always best to purchase Green Giant peas, and for the Saltines, purchase, Price Rite or Stop and Shop brands go. This snack may sound a bit strange at first, but the taste is undeniable, parents, just warm the peas, and place a half a spoonful of peas, on top of the saltine, and watch your toddler much away. This makes a great snack, and it is a great way for children to get a little bit of green in their diet. There is no need to season the peas, you can add a half tablespoon of margarine if you choose, but the peas taste great without anything added.

Bean and salad roll ups- You'll need Ole Soft Flour Tortillas, 1 can of Goya black beans, or Goya kidney beans, a bag of salad mix, or lettuce, a teaspoon of diced onions, 1 packet of Goya Sazon seasoning, and a sprinkle of Sargento cheddar cheese (optional.)

To prepare this lunch, you first want to place a tablespoon of margarine into a frying pan, and slightly cook the diced onions, you then want to drain 90%of the bean juice from the can and then place the beans in with the onions, and then pour 1 packet of Goya Sazon onto the beans, you can let that cook for about 3-5 minutes. While the beans are cooking, you want to take one tortilla roll, lightly swish three drops of water around the front and back of the tortilla (to soften it up) and then put it in the microwave for a half of a minute. Once the tortilla is taken out of the microwave, you should place a half cup of beans into the center of the tortilla, add a bit of salad mix, and sprinkle a bit of cheese, over the salad and beans, then wrap the tortilla up, cut it in half, and serve the children, 1 half at a time.
